Party spread






On 3rd November we celebrated our son’s 9th birthday with a small party. I prepared all foods , that is the best gift I can give to him. When I am in kitchen home will spread with aroma that creates festive mood in us  :) my son loves to come in between to ask what all I prepared in his special day when he tells 'it’s so yummy! Umma..you are the best in the world'.. I feels like I accomplished everything:)
My menu goes like this
Hyderabadi mutton biriyani, thalassery fish biriyani, chicken noodle, creamy chicken pasta, gopi Manchurian, vegetable kuruma, chicken ghee roast, mutton dry fry, crispy fried chicken dish Korean style, squid roast, crab roast, chicken malai kebab, crispy fried prawn, chicken fajita wrap, fish fry, onion rings, apple pola, kai pola, caramel custard, raita, salad ..

Chicken noodles

We need Hakka noodle, boneless chicken I used thigh piece, all four color bell pepper, carrot cabbage , beans, soya sauce, chili sauce, tomato ketchup. Marinate chicken with little bit of ginger garlic paste, chili powder, pepper powder and salt fry this in hot sesame oil and keep aside
Cook noodle in sufficient water. Add salt and little bit of oil into the water to avoid sticking. Once it cooked strain straight away and add cold water to avoid further cooking.

(Mean time in a bowl mix all sauces together and keep aside)
Heat a wok add sesame oil (you can use the one used for fry chicken) add all thinly sliced veggies into the hot oil stir continuously for 2 min. Add little bit of salt don’t add too much we already added salt into the chicken and noodle. Also soya sauce has salt in it.

Add fried chicken and stir. Make sure flame is in high. Now add sauce and mix it well. Soon add cooked noodle into it . Mix with two spatula or fork . Make sure everything combined well . Chicken noodle is ready to serve



Chicken fajita wrap

For this we need boneless chicken try to use thigh piece it’s more juicier than breast piece. Bell peppers orange, yellow, green and red. Onion, garlic, cumin powder, pepper powder, paprika or Kashmiri chili powder, tomato ketchup, olive oil, butter and salt.

Heat a pan add half tbsp olive oil and 2tbsp butter add thinly sliced chicken into it then add chopped garlic, pepper powder and salt. Let it cook. Once chicken is 90 % done add bell peppers and onion ( make sure that all are cut as strip) now add cumin powder, paprika and salt mix well finally add tomato ketchup. Meantime heat a pan and place tortilla ( you can get all purpose flour tortillas from super market) heat it up for 1 minute. Place prepared chicken fajita on tortilla , make a roll and serve



Chicken ghee roast

First marinate small pieces of chicken with yogurt, garlic and ginger paste, turmeric powder, chili powder and salt keep it for 1-2 hour . In a pan dry roast some dried red chili, coriander seed, cumin seed , fennel seed and pepper corn. Make a course paste by adding some lemon juice. Let’s fry chicken....take a pan keep at medium flame add ghee then some chopped onion garlic and ginger sauté it for few minutes then your marinated chicken and the masala paste add some curry leaves also mix it and cook at low flame with occasional stirring. Once your chicken cooked well and the ghee is separated you can serve this as side dish for paratha, chapati, naan etc
